Soul Food Sessions for Black History Month....open to members of the public!

Cooking Club is hosting 4 sessions as part of Black History Month. Tuesdays 7th and 14th October 10.30-2pm and Thursdays 2nd and 9th October 10.30-2pm.
We will be focusing on the cuisine of Africa and The Carribean. This is a very varied palate! The flavours are warm and smouldering,  with cinamon, chilli, ginger and cloves.
Our first session was looking at of West African dishes: Ghanian Jollof Rice (our vegetarian version), roasted sweet potato and plantain chips and a beautiful ginger, lemon and mint punch from Mali.
We learned that Sweet Potatoes are brimming with health benefits. Apart from being ideal for diabetics they contain Vitamin C, Vitamin D, Vitamin B6, Iron, Magnesium, Potassium, Beta-carotene. All these improve our immune system, eyesight, nerve function, bone density, healthy heart, skin and teeth, energy levels, resistance to stress and Wintertime low moods (SAD).

Our next session on October 7th will feature food from Maurtius, an island between Africa and India which has absorbed cultural influences from it's surrounding neighbours as well as it's colonists, particularly French "Creole" cooking and it's Chinese immigrants.

Lovely Louise and learning to make Sushi

For the whole of September, we were lucky enough to have a guest volunteer: Louise.  She was visiting London from Belgium to improve her English. She lead workshops on how to make vegetarian Sushi and California Rolls. Everyone had a go, made beautiful sushi and enjoyed eating it for lunch. Some members had never tasted it before.
To accompany it : Miso soup with  mungbean noodles and shitake mushrooms, Tempura fried vegetables and left over veg were converted into a colourful salad with a ginger dressing.
We were all sad to say goodbye to lovely Louise, as she has now gone back to her University course. Cooking Club wish you the best and come back to see us one day!

CoolTan Arts Cooking Club Recipe at Baldwins Health Food Centre

We are very proud to see that G.Baldwin & Co on the Walworth Rd. are featuring Cooking Club's Mood-Enhancing Ice-lolly recipe on their blackboard behind the till in their newly refurbished shop. Staff say that many customers are photographing it with a desire to make them at home.

Green Summer celebration!

We have discovered that we can cool down and boost our nutritional intake while keeping calories low by eating lots of fresh greens. To make salads and tarts and soups taste more interesting and varied, we have been raiding our windowsill herb garden to add a variety of green leaves into our salads and pestos: coriander, mint, dill, parsley, basil and alfalfa have been thrown liberally into the mix.  We made a pesto with spinach and basil leaves and the rind of a lemon:

Pesto

Ingredients

A handful each of basil leaves, spinach, flat parsley
4 cloves of garlic
5 Tablespoons olive oil
Juice of 2 lemons
1 Tablespoon grated parmesan
Pinch of salt and pepper
Pine nuts

All ingredients go into an electric mouli and are blended until a lovely green paste.

This delicious Pesto was added to boiled Pasta spirals and fresh, chopped spinach leaves.

Heat until warm, or serve cold.

Mood-Enhancing Ice Lollies!!!!!!

After weeks of research and experimentation, our mood-enhancing ice lollies were unveiled at CoolTan Arts' Mad Hatters' Tea Party on Saturday 14th June. We accompanied them with a demonstration and tasting session. We also looked at pre-packed, branded  fruit drinks available in shops and discovered that some contained as little as 10% fruit and lots of unhealthy ingredients such as masses of sugar, glucose syrup, aspartame and saccharine. We found a lot of reports from studies that cited these ingredients as having negative effects on mood and mental health.

Here are  our top 3 healthy, mood-enhancing ice-lollies:
*Strawberry, Rose and saffron
*Lemon and Herb
*Banana, omega and cardamon

Strawberry Saffron Omega Delight........a luxurious lolly with a hint of rose - reminiscent of Turkish Delight. In studies, ingredients have been found to help alleviate depression. Suitable for vegetarians.
* 1 cup  fresh strawberries  ( low-calorie, vitamins, antioxidents, magnesium for energy, immune support and nervous system)
*1 cup natural bio-yoghurt either full-fat or low fat according to taste.(probiotics for healthy gut flora)
 * half a cup oat milk ( B-vitamins, Vit-D  calcium for energy, nervous system, sleep healthy bones)
  * 2 tablespoons organic rapeseed oil (omega 3&6 shown to improve brain function and
depression)
*2 teaspoons rose water (calming and mood-elevating)
*1 pinch saffron (shown to be an anti-depressant)
* 1 tablespoon honey
In a bowl, add the rose water, rapeseed oil and saffron strands. Cover and leave to infuse for 15 - 30 minutes.
De-husk the strawberries and place in a liquidiser or blender. Spoon on top the yoghurt, honey and oat milk (cold water can be used for a very low-fat version).
blend all until all the strawberries are mixed in.
Finally, pour in the saffron-infused oil and rose water and blend again until all ingredients are mixed. This creates a beautiful sunset coloured cream.
Pour carefully into waiting ice-lolly moulds and place in  the freezer to become solid. They are a perfect after-dinner treat and for more luxury and calories can be dipped in chocolate!
recipe inspired by "Omega Mania Ice Lolly" by Dale Pinnock and re-imagined by Jill Newman.
All ingredients were obtained at G.Baldwin & Co. Health Food Centre, 171-173  walworth Rd, se17 except for fresh strawberries bought at East St. market se17

Lemon Herbal Cooler.......a refreshing low-calorie, calming and sleep-promoting ice lolly suitable for vegans and diabetics.
*A handfull of fresh herbs leaves: Lemon Balm  ( calms anxiety and helps sleep), Lemon
verbena (calming, mental clarity), Spearmint (mental clarity and helps sleep)
*Juice of one and a half fresh lemons (Vitamin C, bioflavinoids)
*2 tablespoons Xylitol (a natural sweetner made from Birchwood. Suitable for diabetics with the added bonus of promoting healthy teeth and gums)
In a teapot, make an infusion with most of the herb leaves. Then save a couple of each for later.  Stir well and set aside to cool.
When the infusion is luke-warm, stir in the Xylitol. Leave to cool further.
Then strain the "tea" through a seive into a liquidiser to remove the soggy leaves.
Add the squeezed juice of  the lemons and the left over herb leaves.
Blend well together until the leaves are dispersed. The mixture looks like lemon and limeade with tiny flecks of green (leaves) throughout.
Carefully pour the mixture into ice -lolly moulds and place in the freezer.
When they are frozen they are ready to enjoy!
